Danish Carnival buns/Fastelavnsboller

Today I got distracted from playing Sims by my need to make “Fastelavnsboller”

Word of warning: These buns are yummy and the recipe sounds way harder then it is.

Note: dl = deci liter

Make the fill before you make the dough so it has a chance to cool off while you make the dough. It thickens while cooling as well.

Fill
2 dl milk
2 dl cream
1 dl sugar
1 teaspoon vanilla sugar
2 eggs
2 tablespoons cornstarch

Milk, cream, sugar and vanilla to the boil and remove from heat. Eggs and cornstarch whipped. Mix the egg mixture and milk mixture into the pan and bring to the boil again and remove from heat. Set the mass for cooling.

The dough
150 g butter
25 g yeast
2 dl milk
1 egg
350 g flour
Fourth tst sugar

Heat the milk until it is warm and melt the butter in milk. Dissolve the yeast in the milk and butter. Add the eggs. Then add the sugar and flour a little at a time until you have a dough that looks like ordinary dough.

Assembling the buns
Roll out the dough and cut squares out of the dough. Place a teaspoon of the filling in the middle of the dough square and fold the corners into the filling so ends is under the ball. It is a bit like making dumplings. Put the bowl on baking tray (with baking paper).

Leave to rise for the 20-30 min
Bake the buns for 20-30 minutes at 200 degrees C.

Let the buns cool off before adding the frosting:

Frosting
4 tbsp icing sugar
1 tablespoon cocoa powder
a bit of water

Start with icing sugar and cocoa and pour a little water at a time until you have a reasonable thickness glaze

And in Danish:

Fyld
2 dl mælk
2 dl fløde
1 dl sukker
1 tsk vaniljesukker
2 æg
2 spsk majsstivelse

Mælk, fløde, sukker og vanilje bringes i kog og tages af varmen. Æg og mejsstivelse piskes. Bland æggemasse og mælkeblandingen i gryden og bringes i kog igen og fjernes fra varmen. Stil massen til afkøling.

Dej
150 g smør
25 g gær
2 dl mælk
1 æg
350 g mel
1/4 tst sukker

Varm mælken til det er lunt og smælt smøren i mælken. Opløs gæren i mælk og smør. Tilsæt æg. Tilsæt derefter sukker og mel lidt ad gangen indtil du har en dej der ligner helt almindelig dej.

Sammel bollerne
Rul dejen ud og skær firkanter ud af dejen. Placer en tsk af fyldet midt på dej-firkanten og fold hjørnene ind under fyldet så enderne er under bolden. Sæt bollen på bagepladen (med bagepapir).

Lad bollerne efterhæve i 20-30 min
Bag bollerne i 20-30 min ved 200 grader C.

Lad bollerne køle af inden du putter glasur på:

Glasur
4 spsk flormelis
1 spsk kakao pulver
a bit of water

Start med flormelis og kakao og hæld en lille smule vand i ad gangen indtil du har en fornuftig tykkelse glasur
