Spider muffins

These are based on a Swedish recipe called “St Lucia Muffins” from the page dagensmuffin.se. I can no longer find the recipe online so I decided to share it.


1 dl = 100 ml

  • 4 dl wheat flour
  • 2 dl sugar
  • 1 teaspoon salt
  • 25 g melted butter
  • 1½ dl milk
  • 1-2 eggs
  • 1½ dl raisins
  • ½ apple
  • ½ dl hazelnuts (or walnuts)
  • 1 teaspoon cinnamon
  • licorice strings for legs
  1. Mix flour, sugar, salt and baking powder.
  2. Add the melted butter.
  3. Whip together milk and eggs.
  4. Stir in the flour, eggs and raisins. Grade the apples, chop the nuts and add the sugar and cinnamon. Mix it all into the mix.
  5. Pour the mix into the muffin forms (it’s always a good idea to butter them). I find that using silicon forms works much better than paper.
  6. Bake the muffins for about 20 minutes at 220-225 C
  7. Let them cool and stick in the cool legs!
